I am American born and hold dual citizenship with the U.S. and the U.K. Originally I am from Los Angeles but in 1992 I married a lovely Englishman and have lived here in Surrey ever since. I’ve had two children, my son Aaron who died in 1991 age 7, from Wilm’s Tumour – a kidney cancer. In 1995 I had my lovely daughter, Eve. Truly my life began again with my move to England.
All my adult life I have used low-carb as a way of controlling my weight and my IBS. From the early 70’s I have used Stillman’s meat fast and Atkins low-carb diets. After coming to the UK over 20 years ago I have also used the Hay Diet (food-combining). Now I am researching the LCHF (low-carb high fat) way of eating. Every day I read about a new medical breakthrough using a Ketogenic Diet. There is now medical evidence that a ketogenic (LCHF) diet may be of help to people with all manner of neurological problems such as epilepsy, migraine, autism, brain tumours and alzheimers. There are medical trials being conducted right now on cancer, something I naturally have a keen interest in. Arthritis and fibromyalgia sufferers may also benefit from this way of eating. It is very exciting!
I began my interest in specialist cooking when on a big family holiday. With us were a Crohn’s sufferer, a diabetic, two gluten intolerants, and three lactose intolerants. I offered to do all the cooking including the production of a birthday cake! I really enjoyed the creativity and being able to feed everyone happily despite their health issues. I’m happy to say I have learned a lot since then and improved my skills and I want to share what I’ve learned with you.
My interests led me to doing two diploma courses – I hold an advanced diploma in person-centered counseling and a diploma in personal nutrition. I also have a certificate in bereavement counseling.
My goal is to help people live happier, healthier lives through cooking and counseling. Each person is an individual with personal goals and together we decide the best way to reach those goals. I work in a non-judgmental, caring way and consider my work a privilege. I then become a guide, counselor and coach for them while they are on their journey.
